Cajun Fish

INGREDIENTS
 
2 tablespoons Cajun spice mix
 
2 x 150g firm white fish fillets such as ling, basa would be fine though
 
  olive oil spray
 
2 x 250g pkts Coconut, Chilli & Lemongrass Steamed Basmati Rice
 
1 avocado, halved, stone removed, peeled, coarsely chopped
 
 
 
INSTRUCTIONS
 
1.   Place the spice mix on a large plate. Add the fish and turn to coat.
 
2.   Spray a large non-stick frying pan with olive oil spray to grease. Add the fish and cook for 2-3 minutes each side or until the fish flakes easily when tested with a fork in the thickest part.
 
3.   Meanwhile, heat the rice following packet directions.
 
4.   Divide the rice among serving dishes. Top with the fish and avocado. Serve immediately.
 
   
 
    (If you can't find the rice pack, you can make your own with these ingredients)
- basmati 90 sec rice pack
- 1/2 165ml coconut milk can
- 1/2 lime juice
- chilli flakes
(Cook the rice then mix in the rest!)
