Chilli Jam Chicken

INGREDIENTS
 
500 g chicken breast
 
1 medium onion
 
1 red capsicum (optional)
 
2 tablespoons peanut oil
 
2 tablespoons Ayam chilli jam paste
 
1 tablespoon light soy sauce
 
1 tablespoon lime juice
 
  cashew nuts, to serve
 
    cooked rice, to serve
 
 
INSTRUCTIONS
 
1.   Dice chicken, onion, and capsicum into strips.
 
2.   Put 1 tablespoon of oil into a wok/pan and cook the chicken until golden. Remove from wok and set aside covered.
 
3.   Add another tablespoon of oil to the wok and cook onion, then add capsicum, then put the cooked chicken back in.
 
4.   Add the chilli jam, then soy sauce, then lime juice. Then serve with rice and cashew nuts .
