Cucumber Feta Dill Salad

INGREDIENTS
 
120 g feta cheese
 
4 lebanese cucumbers
 
1 small red onion, thinly sliced
 
1 1/2 tablespoons finely chopped fresh dill
 
1 tablespoon dried mint
 
1 tablespoons olive oil
 
1 1/2 tablespoons lemon juice
 
 
INSTRUCTIONS
 
1.   Crumble the feta into 1cm pieces and place in a large bowl. Peel and seed the cucumbers and cut into 1cm dice. Add to bowl along with the onion and dill.
 
2.   Grind the mint in a mortar and pestle until powdered. Combine with the oil and juice, then season with salt and black pepper. Pour over salad and toss well.
