Easy Vegan Fried Rice

INGREDIENTS
 
1 cup tofu - medium
 
420 cup white rice, cooked
 
1 clove garlic, minced
 
1 cup green onion, chopped
 
1/2 cup peas
 
1/2 cup carrots, finely sliced
 
  dried shallots, peanuts and chilli oil, to serve
 
    [SAUCE]
 
3 tablespoons tamari
(or soy sauce)
 
1 tablespoons maple syrup
(or brown sugar)
 
1 tablespoon peanut butter
(smooth)
 
2 teaspoons chilli garlic sauce
 
 
 
INSTRUCTIONS
 
1.   Chop up all ingredients. Prepare sauce, all ingredients into a mixing bowl and whisk.
 
2.   Add all ingredients except rice and sauce in a frypan and sauté for 5 minutes. Then season with 1 tablespoon of soy sauce.
 
3.   Meanwhile cook packet of 90 second rice.
 
4.   Add cooked rice to frypan until rice is starting to brown. Add sauce mixture. Cook for a few minutes then serve, with dried shallots peanuts and chilli oil.
