Easy Vegan Fried Rice

INGREDIENTS

cup tofu - medium
|
| 420 |
|
cup white rice, cooked
|
| 1 |
|
clove garlic, minced
|
| 1 |
|
cup green onion, chopped
|
| 1/2 |
|
cup peas
|
| 1/2 |
|
cup carrots, finely sliced
|

|
dried shallots, peanuts and chilli oil, to serve

[SAUCE]
|
| 3 |
|
tablespoons tamari
(or soy sauce)
|
| 1 |
|
tablespoons maple syrup
(or brown sugar)
|
| 1 |
|
tablespoon peanut butter
(smooth)
|
| 2 |

teaspoons chilli garlic sauce

INSTRUCTIONS

Chop up all ingredients. Prepare sauce, all ingredients into a mixing bowl and whisk.

Add all ingredients except rice and sauce in a frypan and sauté for 5 minutes. Then season with 1 tablespoon of soy sauce.

Meanwhile cook packet of 90 second rice.
|

|
Add cooked rice to frypan until rice is starting to brown. Add sauce mixture. Cook for a few minutes then serve, with dried shallots peanuts and chilli oil. |
