INGREDIENTS

tomatoes, cut into thin wedges

red onion, cut into thin rings
|

lebanese cucumbers, sliced

cup kalamata olives
|

g vegan feta cheese
|

cup olive oil
|

large lettuce leaves, chopped

avocado, diced
|
|
|
dried oregano, to sprinkle |

INSTRUCTIONS

Combine the tomato wedges, onion rings, cucumber and Kalamata olives in a large bowl. Season to taste with salt and black pepper.

Break up the feta into large pieces with your fingers and scatter over the top of the salad. Drizzle with the olive oil and sprinkle with some oregano. |
