Masaman Curry

INGREDIENTS
 
114 g can of masaman curry paste
 
2 x 270ml can coconut milk
 
2 small potatoes
 
2 small carrots
 
1/2 cup peas
 
  lime to serve
 
  chopped peanuts, to serve
 
  naan bread or rice, to serve
 
 
INSTRUCTIONS
 
1.   Stir fry 1 can of masaman curry paste with half of the coconut milk for 5 minutes on medium heat.
 
2.   Add the potato carrots and peas, then pour in the remaining half of coconut milk and stir until it boils.
Then simmer for about 20 minutes until the vegetables are soft.
 
3.   Serve with peanuts and lime wedges with rice or bread.
