INGREDIENTS
 
1 packet of nacho chips
 
1 pack vegan cheese, grated
 
420 g can red kidney beans
 
1 jar of salsa
 
1 jalepinos (in jar or fresh)
 
  [Guocomoli]
 
1 avocado
 
1 tomato
 
1 small red onion
 
  lemon juice
 
  salt
 
  sour cream, to serve
 
 
INSTRUCTIONS
 
1.   Put nacho chips on a oven tray. Top with beans, then salsa, the jalepinos, then cheese. Put in the oven on 180 degrees until cheese is melting and chips start going brown.
 
2.   Meanwhile, make guocomoli, by pealing then mashing avocado with a fork in a bowl. Finely chop a tomato and mash it in. Finely chop a few slices of red onion and mash it in. Then add lemon juice and salt to taste.
 
3.   Serve nachos with guocomoli on top and sour cream. Put on some Tabasco sauce for an extra kick of heat.
