Ramen Noodle Soup

INGREDIENTS

packet tofu
|

|
bunches of boc choy
|

|
pack of bean shoots
|
1 |
|
bunch of mushrooms
|
2 |
|
spring onions
|
1 |
|
packet soba noodles (or rice noodles)
|
4 |
|
cups vege stock (1 litre)
|
1 |
|
carrot, shredded
|
|
|
tamari/soy sauce to taste |
|
|
or sichuan pepper sauce
|

INSTRUCTIONS

Cook noodles to packet directions, then drain.
|

Meanwhile, cut and prepare all ingredients.
|

In a large pan over medium heat, add 2 teaspoons of sesame oil.
Once hot, add mushrooms. Saute for 5 minutes. Add carrot and green onion. Saute for 2-3 minutes.
Add bok choy and cook for 1 minute.

Add vege stock and all other ingredients and cook until boiling. Add tamari/soy sauce to taste.

Serve, with sirachna sauce |
