Ramen Noodle Soup

INGREDIENTS
 
1 packet tofu
 
2 bunches of boc choy
 
1 pack of bean shoots
 
1 bunch of mushrooms
 
2 spring onions
 
1 packet soba noodles (or rice noodles)
 
4 cups vege stock (1 litre)
 
1 carrot, shredded
 
  tamari/soy sauce to taste
    or sichuan pepper sauce
 
 
INSTRUCTIONS
 
1.   Cook noodles to packet directions, then drain.
 
2.   Meanwhile, cut and prepare all ingredients.
 
3.   In a large pan over medium heat, add 2 teaspoons of sesame oil.
Once hot, add mushrooms. Saute for 5 minutes. Add carrot and green onion. Saute for 2-3 minutes. Add bok choy and cook for 1 minute.
 
4.   Add vege stock and all other ingredients and cook until boiling. Add tamari/soy sauce to taste.
 
5.   Serve, with sirachna sauce
