Sweet Potato & Spinach Pasta

INGREDIENTS
 
1 sweet potato
 
2 handfuls of spinach
 
  penne pasta
 
1 lemon
 
2 tablespoons of olive oil
 
  chilli flakes, to serve
 
  parmesan cheese, shaved
 
 
INSTRUCTIONS
 
1.   Cook pasta and set aside.
 
2.   Season sweet potato with salt and pepper and roast in olive oil for 20-25 minutes.
 
3.   Heat olive oil in pan, fry roasted sweet potato and penne pasta and lemon juice and toss together. Add spinach until it wilts.
Tip: Add extra olive oil if pasta looks dry.

 
4.   Serve with shaved vegan parmasan and lots of chilli flakes.
