Sweet Potato & Spinach Pasta

INGREDIENTS

sweet potato
|

handfuls of spinach
|

|
penne pasta
|
| 1 |
|
lemon
|
| 2 |
|
tablespoons of olive oil
|
| |
|
chilli flakes, to serve
|
| |
|
parmesan cheese, shaved |

INSTRUCTIONS

Cook pasta and set aside.

Season sweet potato with salt and pepper and roast in olive oil for 20-25 minutes.

Heat olive oil in pan, fry roasted sweet potato and penne pasta and lemon juice and toss together. Add spinach until it wilts.
Tip: Add extra olive oil if pasta looks dry.

Serve with shaved vegan parmasan and lots of chilli flakes. |
