Thai Meatballs
(with Peanut Sauce)

INGREDIENTS

g beef mince
|
|
|
flour for coating
|
|
|
oil for frying
|

tablespoons chopped fresh coriander
|

[Peanut Sauce]
|

|
tablespoon red curry paste
|
2 |
|
tablespoons crunchy peanut butter
|
1 |
|
tablespoon brown sugar (well packed)
|
1 |
|
tablespoon lemon juice
|
300 |
|
ml coconut milk |
|
INSTRUCTIONS

Roll beef mince into small balls and coat lightly in flour. Deep shallow-fry meatballs until golden brown and cooked through. Drain on absorbent paper.

Peanut sauce: Drain off most of oil from pan leaving about 1 tablespoon. Add curry paste and fry for 1 minute.

Add all other ingredients except coriander and bring to the boil. Add meatballs, lower heat and simmer for 5 minutes or until sauce has thickened. Sprinkle with coriander to serve. |
