Thai Meatballs
(with Peanut Sauce)

INGREDIENTS
 
500 g beef mince
 
  flour for coating
 
  oil for frying
 
2 tablespoons chopped fresh coriander
 
  [Peanut Sauce]
 
1 tablespoon red curry paste
 
2 tablespoons crunchy peanut butter
 
1 tablespoon brown sugar (well packed)
 
1 tablespoon lemon juice
 
300 ml coconut milk
 
 
INSTRUCTIONS
 
1.   Roll beef mince into small balls and coat lightly in flour. Deep shallow-fry meatballs until golden brown and cooked through. Drain on absorbent paper.
 
2.   Peanut sauce: Drain off most of oil from pan leaving about 1 tablespoon. Add curry paste and fry for 1 minute.
 
3.   Add all other ingredients except coriander and bring to the boil. Add meatballs, lower heat and simmer for 5 minutes or until sauce has thickened. Sprinkle with coriander to serve.
