Thai Red Curry Rice

INGREDIENTS
 
1 cup long grain rice
 
2 tablespoons oil
 
1 tablespoon red curry paste
 
1 1/2 tablespoons soy sauce
 
2 coriander plants, roots included, chopped
 
2 cups of water
 
 
INSTRUCTIONS
 
1.   Heat oil in a large saucepan. Add rice and fry until golden brown, about 4 minutes, stirring occasionally. Stir in curry paste and fry for 1 minute.
 
2.   Add coriander, water and soy sauce and bring to boil. Cover with a lid, turn heat to very low and cook for 10 minutes. Remove from heat and allow to stand for 5 minutes before serving.
