Thai Red Curry Rice

INGREDIENTS

cup long grain rice

tablespoons oil
|

tablespoon red curry paste
|
1 1/2 |
|
tablespoons soy sauce
|

|
coriander plants, roots included, chopped
|
2 |
|
cups of water |

INSTRUCTIONS

Heat oil in a large saucepan. Add rice and fry until golden brown, about 4 minutes, stirring occasionally. Stir in curry paste and fry for 1 minute.

Add coriander, water and soy sauce and bring to boil. Cover with a lid, turn heat to very low and cook for 10 minutes. Remove from heat and allow to stand for 5 minutes before serving. |
