Tomato & Feta Pasta

INGREDIENTS
 
3 cups, cooked pasta
 
1 bunch cherry tomatoes
 
1 block vegan feta
 
3 cloves garlic, skin on
 
1/4 cup freshly chopped basil
 
  italian herbs seasoning
 
  salt and pepper, to taste
 
  olive oil, to drizzle
 
 
INSTRUCTIONS
 
1.   Put a bunch of cherry tomatoes in a baking dish. Put the vegan feta block in the centre. Drizzle with olive oil. Add the garlic with skin on. Add salt, pepper and italian herbs.
 
2.   Roast for 35 minutes on 180 degrees.
 
3.   Meanwhile, cook pasta as per packet directions.
 
4.   Once tomatoes are cooked, squeeze out garlic from their casing, then mash garlic, tomatoes and feta up with a fork.
 
5.   Stir through cooked pasta, sprinkle with freshly chopped basil and serve.
