Zucchini Soup

INGREDIENTS
 
1.5 kg zucchini
 
120 g butter (nutalex)
 
6 cloves garlic
 
1 teaspoon salt
 
4 tablespoons flour
 
2 cups water
 
2 teaspoons vege stock
 
600 ml soy milk
 
 
INSTRUCTIONS
 
1.   Microwave zucchini for 10 mins.
 
2.   Cook garlic in butter.
 
3.   Add zucchini and cook for a few minutes.
 
4.   Add salt and stir in flour.
 
5.   Remove from heat and gradually add water and stock.
 
6.   Heat till boils. Blend. Add milk then reheat. Serve.
